Acetylated monoglycerides are fat-soluble and nonionic surfactants, which are majorly used in the food and beverage industry.  Acetylated monoglycerides are used in food baking and food formulations as non-ionic surfactants. Acetylated monoglycerides are used in foods such as toppings, whippable emulsions, cake batters or mixes, specialty fats, etc. Monoglycerides are esterified with a range of organic acids such as diacetyl tartaric, lactic acid, citric, acetic, etc. Acetylated monoglycerides are produced using the distillation of monoglycerides with an acetic acid anhydride.

The degree of acetylation, the formation of mono- or di-acetylated monoglycerides, varies from 50% to 90%. Acetylated monoglycerides are also produced using interesterification of a blend of glycerol, triacylglycerols, and triacetin. Some of the common fatty acids present in acetylated monoglycerides are stearic acid and palmitic acid. Two types of acetylated monoglycerides are present namely fully acetylated monoglycerides and partially acetylated monoglycerides. In an aqueous environment, monoglycerides can form different types of self-assembly structures.

Monoglycerides are used as emulsifiers in various types of food products such as desserts, toppings, non-dairy creamers, and bakery products. Acetylated monoglycerides act as lubricant and solvent as it is liquid at low temperature. Acetylated monoglycerides have a Reichert value between 75 and 200 and an acid value less than 6. Acetylated monoglycerides are also used in food processing as it performs functions such as stabilizing lipid components, preventing separation, improving food texture, food thickening, extending food shelf life, etc.

Acetylated monoglycerides have a hydrophilic-lipophilic balance of 1.5, which indicates that these have the low emulsifying capacity.  These are used for stabilizing and extending the food shelf life of bakery products such as fillings, frostings, whipped cream, etc. Acetylated monoglycerides have their use in cake batters.
